There’s no doubt the best thing about Thanksgiving is the turkey. I mean, it’s the holiday’s mascot, right? And Thanksgiving dinner is one of the best meals of the year. Of course, after we enjoy our Thanksgiving meal, we undoubtedly want to take a nap.
But did you know it’s not the tryptophan in the turkey that makes you want to take a nap after you eat it? Come to find out, nuts, chicken, pork, eggs, and beans all have tryptophan in them (some even more than turkey) and they don’t make you want to crash after you eat them. The truth is that the reason we all want to snooze after Thanksgiving dinner is because it’s a lot of food. Turkey, mashed potatoes, gravy, rolls, cranberry sauce, veggies, pies, whipped cream…it’s a lot more than we’re used to eating. So it’s no surprise our bodies go into shutdown mode as they try to digest the copious amounts of delicious food we just ate.
So, when you try to think of ways to use up that leftover turkey, the last thing you want to do is have another heavy meal, right? That’s what I love about this Tzatziki Turkey Salad. Perfect inside a pita or a lettuce leaf, it’s kinda like chicken salad. But that’s where the similarities end. Because this Tzatziki Turkey Salad is SO MUCH MORE. It’s packed with all kinds of goodies, like red onion, celery, kalamata olives, cucumber, and roasted red peppers. But the best part is that sauce holding all these goodies in. Not mayo, my friends. None at all, in fact. It’s tzatziki sauce, a Greek sauce made of yogurt, lemon juice, fresh dill, and garlic.
It’s delicious and light—and the perfect way to enjoy leftover turkey after a heavy Thanksgiving dinner.
- 1 5.3-oz tub fat-free plain Greek yogurt
- ¼ cup chopped red onion
- 2 tsp chopped fresh dill
- 1 Tbsp lemon juice
- ¼ tsp kosher salt
- ¼ tsp black pepper
- 1 garlic clove, minced
- ½ large cucumber, peeled and chopped
- 2 cups chopped cooked turkey
- ¼ cup roasted red pepper, chopped
- ¼ cup kalamata olives, chopped
- Oregano, to taste
- Red pepper flakes (optional)
- Combine all ingredients in a medium bowl. Serve with pita chips or inside of a pita pocket.
