Sometimes I’m indecisive. I mean, I’m a girl. So it comes naturally. But you know what? Like I tell my husband, being indecisive isn’t necessarily a bad thing. It just means I see the good in the many options I have and sometimes it’s hard to choose what’s best. It means I’m an optimist. Right?
So, as an indecisive optimist, I love cookies that include a little bit of everything I love. Then I don’t have to choose. I just throw them all in and savor each and every delicious bite. That’s what I love about these Toasted Coconut Oatmeal Chocolate Chip Cookies. Toasted coconut? Oh heavens, yes. Oatmeal? Of course. Chocolate chips? You better believe it, baby. They’re all tucked away in these golden, crispy, amazing cookies. I brought the batch I made to work the other day and they disappeared. I guarantee they’ll do the same for you. 🙂
- 1 cup butter, softened
- 1 cup sugar
- 1 cup packed dark brown sugar
- 2 eggs
- 1 tsp vanilla extract
- 1-1/2 cups flour
- 1 tsp baking soda
- ½ tsp salt
- 3 cups quick-cooking or old-fashioned oats
- 1 cup coconut, divided
- 1 11.5-oz bag milk chocolate chips
- Preheat oven to 350 degrees.
- Beat the butter, sugar, brown sugar, eggs, and vanilla together until well blended.
- In a medium bowl, stir together the flour, baking soda, and salt. Slowly add to the butter mixture and mix until smooth.
- Stir in the oats, chocolate chips, and half of the coconut.
- Using a cookie scoop, drop teaspoonfuls of cookie dough onto a cookie sheet that is lined with parchment paper or that has been greased.
- Bake 10 minutes and turn oven to broil. Sprinkle cookies with remaining coconut and bake until cookies are golden and the coconut is browned.
- Let rest on pan for 5 minutes, then remove to rack to cool.
