Can you believe Thanksgiving is just a few short weeks away? I love this time of year. You could even say it’s the most wonderful time of the year. Cue the Christmas music. 😉
The holidays are special because they mean spending time with family, laughing, and making memories. They also mean plenty of delicious home-cooked food. I come from a family of women who love to cook, so our family gatherings always have an incredible spread of appetizers, main dishes, and desserts. But with all the yummy eats, treats, and sweets, it’s difficult to maintain a healthy lifestyle.
That’s why I love Weight Watchers so much. I joined about 5 years ago when my sister got me a gift certificate to attend a meeting and start the program. So I attended my first meeting and started tracking my points. And friends, I have never looked back. I’ve stayed on the program and it has even helped me lose my post-pregnancy baby weight twice. I am a lifetime member and can’t imagine a better program to help me stay on track. The thing I love about Weight Watchers is that it helps you control your portions and you don’t have to make any food completely taboo. You just have to be mindful of what you eat and remember to enjoy things in moderation. As a full-time working mom, I love that Weight Watchers has frozen meals and tasty snacks that I can bring to work that will help me track and stay within my points.
And the great thing is I can maintain a healthy lifestyle year-round. Yep, even during the holidays. With the Weight Watchers Recipe Builder, I can type in my ingredients and find out how many points a serving of my recipe is. And I can create lighter recipes using the variety of Weight Watchers products I can find at the store, like breads, snacks, and cheeses. Like these Spicy Baked Mozzarella Sticks. I found the ingredients for them, as well as all the other things on my grocery list, at Walmart.
These oven-baked mozzarella sticks are a delicious spin on a classic. Best part? They’re lightened up and come with a little bit of a kick from Weight Watchers Jalapeno String Cheese and some southwestern seasonings. AND they’re only 2 Weight Watchers points each. Happy holidays indeed! These Spicy Baked Mozzarella Sticks are super easy to make and require just a few ingredients. What could be better than a quick and easy appetizer that gives you more free time to enjoy the holidays (and the praises for the food)?
To start, crack the egg into a bowl and whisk it. Then put the flour in a separate bowl and the bread crumbs and panko into another bowl. Add the seasonings to the crumbs mixture and stir to combine.
Unwrap each mozzarella stick and cut each in half so you have 24 pieces. Then, using one hand, dip each stick into the flour, shaking off the excess, and then into the egg. With your other hand, dip each into the bread crumb mixture. Using one hand for the egg and the other for the bread crumbs will keep your crumbs from getting too soggy and clumpy.
When the sticks are well coated, place them onto a foil-lined cookie sheet and then stick the cookie sheet into your freezer. Freeze the sticks for at least 30 minutes. Do not skip this step. If you do, the sticks will melt too quickly in the oven and it’ll be one hot mess. When the 30 minutes are up, spray the sticks with cooking spray, pop them in the oven, and bake them for 5 minutes. Turn them once, and then bake them for an additional 5-6 minutes. DONE! Easy peasy. Serve them with homemade Ranch or your favorite dip. Now you can enjoy more time with your family and spend less time fussing over the food.

- 1 egg
- ¼ cup flour
- ½ cup plain bread crumbs
- ½ cup panko crumbs
- 1 tsp chili powder
- ¼ tsp cumin
- ¼ tsp garlic powder
- ¼ tsp oregano
- ¼ tsp paprika
- ¼ tsp salt
- 1 package Weight Watchers Jalapeno mozzarella string cheese
- Crack egg into a shallow bowl and beat. Put flour into another shallow bowl and bread crumbs and panko in another. Line a cookie sheet with foil and place it next to the bread crumb mixture bowl.
- Add chili powder, cumin, garlic powder, oregano, paprika, and salt to bread crumbs and stir until combined.
- Unwrap each mozzarella stick, arrange sticks into an even pile, and cut sticks in half so that you have 24 pieces.
- With one hand, dip each stick into the flour, shaking off the excess, then into the egg. Using your other hand, dip the stick into the bread crumb mixture. I buried each one and sprinkled crumbs over them to really get a good coating. Place coated sticks onto cookie sheet.
- Place cookie sheet with sticks in the freezer and freeze for eat least 30 minutes.
- Set oven to 400 degrees. Place pan in oven and bake sticks for 5 minutes. Flip each stick over and bake for an additional 5–6 minutes. You'll know they're ready when you lightly squeeze one and it's soft and gooey.
- Remove from oven and place sticks onto a serving platter immediately to avoid further cooking.* Serve with Ranch or your favorite dip and enjoy!
