For as much as my husband loves pizza, it’s a wonder I don’t cook it at home more often. Honestly, the thought of making and baking the crust and cutting up all the toppings just doesn’t seem like a weeknight-friendly task. So we usually (okay, pretty much ALWAYS) opt for delivery and it’s just…not healthy. Not that pizza is supposed to be. But when you make it at home, you can make it healthier and way yummier. And at home you don’t skimp on the toppings. You can load your pizza up to high heaven with all kinds of toppings and you won’t get charged extra or receive a disgusted look from the pimple-faced teenager at the cash register or on the other end of the phone. And best of all? You know exactly what you are putting on your pizza.
So, without further ado, I would like to introduce you to Southwestern BBQ Chicken Pizza, the pizza that has made me realize you can make delicious pizzas at home and they don’t have to take even an hour. Because this baby took me less than 30 minutes to make and is really the result of us trying to get rid of some veggies we needed to use up. And the best part? You grill it. Booyah!
I used a premade pizza crust for this because I’m all about quick and easy, but you can certainly use your favorite pizza dough recipe if you prefer. Then you slather it with your favorite BBQ sauce (I used Sweet Baby Ray’s) and pile it high with chicken, black beans, fresh tomatoes, corn kernels (I used leftover grilled corn from the night before), and top it with mozzarella. When you’re done grilling it, sprinkle it with chunks of fresh avocado and you have a deliciously fresh, healthier pizza that your family will devour.
- 1 regular premade pizza crust
- 2 cups cooked chicken, cut into bite-sized pieces*
- ½ cup BBQ sauce
- 1 cup black beans, rinsed and drained
- 1 cup corn (about 2 ears)
- 2 medium tomatoes, diced
- 1 cup mozzarella cheese (or you can use cheddar or pepper jack)
- 2 avocados, cut into chunks
- Preheat grill to medium and prepare for indirect heat.
- Spread BBQ sauce onto pizza. Sprinkle pizza with the chicken, then follow with half of the black beans, tomatoes, and corn.
- Sprinkle evenly with cheese. Sprinkle with remaining black beans, tomatoes, and corn.
- Grill pizza on pizza stone for 12-15 minutes, or until crust begins to brown, cheese is melted, and veggies start to brown.
- Sprinkle with avocado and cut into 8 slices.
