I know it’s summer and I should be grilling like every night, but sometimes you just gotta break out the slow cooker—no matter what the weather outside is like. There’s something about being able to throw the stuff in the crock pot, turn it on, and leave it that is so…simple. And sometimes life can be pretty cray-zay, am I right? So you got to do what you can to simplify, simplify, simplify. And most of the time, when I opt for a slow cooker recipe, I want it to be so freaking easy my 4-year-old could do it. If I have to prep a lot of stuff before, then I might as well cook on the stove, ya know?
That’s what is so great about these Slow Cooker Shredded Beef Tacos. No need to brown or prep the meat. You just stick it in. Then you add the seasonings, french onion soup, garlic, and jalapeno, and you are good to go. As the delicious aroma wafts through your house and you’re salivating as you get closer to the finish line, you can start prepping the yummy goodies you wanna throw on your tacos. Choose your own adventure, friends, because anything you choose will be good. The beef is so versatile and has a mild kick to it, so even little ones will love it. Double the recipe and freeze half to use later. What could be easier?
- 1 10.5-oz can French Onion soup
- 2 Tbsp chili powder
- 1 tsp cumin
- 1 Tbsp minced garlic
- 1 jalapeno, seeded and chopped (I just chopped up 5 rings from a jar of jalapenos)
- 2 lbs boneless beef chuck roast
- Combine all ingredients in slow cooker and stir well to combine. Cook on low for 6-1/2 to 7 hours.
- Remove beef to cutting board. Using 2 forks, shred the beef.
- Return the beef to the slow cooker and stir it into the juices to heat it. Serve it on tortillas with sauteed onions and bell peppers, fresh corn, cheese, salsa, lettuce, cilantro, or any of your favorite taco toppings.
