Sometimes you just need some CARBage. And by carbage, I mean pasta. A yummy, comforting bowl of it. Especially if we’re talking about this Skillet Balsamic Chicken. I gotta tell you that the night I planned on making this dish I DID NOT WANT TO COOK. I was beyond exhausted and could barely function. The thought of cooking after a long, hard day just made me wince. But I womaned up and did what any smart lady would do. I complained to the hubby. And he offered to make dinner. YES.
This Skillet Balsamic Chicken has to be one of my favorite chicken pasta dishes because Balsamic. Sauce. ‘Nuff said. If you’re anything like me and salivate whenever they bring out the oil and vinegar dip that so often accompanies the crusty bread at Italian restaurants, ya know what I mean. Balsamic vinegar is the queen of vinegars. Am I right?
Combine it with some diced tomatoes, Italian spices, and some red pepper flakes and you have the perfect tangy, sweet, and spicy sauce to drink by the glass drizzle over your chicken and noodles.
- 1 pkg rotini noodles (or pasta of your choice)
- 1 14.5-oz can diced tomatoes, undrained
- ½ cup balsamic vinegar
- 2 tsp Italian seasoning
- ¼ tsp red pepper flakes
- 1-1/2 Tbsp olive oil
- 1 lb chicken boneless, skinless chicken breasts or tenderloins, cut into bite-sized pieces
- 1 tsp garlic powder
- Salt and pepper, to taste
- ½ yellow onion, thinly sliced
- 1 8-oz pkg sliced mushrooms
- Hot cooked noodles
- ¼ cup fresh snipped basil
- Cook pasta according to package directions until al dente; drain.
- Meanwhile, combine tomatoes, vinegar, Italian seasoning, and red pepper flakes in a medium bowl. Set aside.
- In a large skillet over medium heat, heat olive oil. Add chicken and saute until lightly browned. Sprinkle with garlic powder, salt, and pepper.
- Add onions and mushrooms to pan and saute until vegetables are crisp-tender.
- Add tomato mixture and reduce heat to low. Simmer until chicken is cooked through. Serve over noodles and sprinkle with basil.
