So yeah, this Shrimp Scampi freaking HAPPENED, friends. And it was glorious!
Awhile back, I was browsing on this little site of mine and found only a handful of recipes with shrimp in them. What the?! I knew it was high time I whipped up something with shrimpies. And of course, pasta was calling my name. Because noodles. So, on a cold and crazy weeknight, this scrumptious Shrimp Scampi was born.
It’s super easy and INCREDIBLE. I’m talking date-night-at-home fancy, but make sure to keep some breath mints handy because in true scampi fashion, there is some garlic in here. Like, f’reals. But that’s okay because we all love garlic and that’s why we’re friends, right? What makes this a breeze to make is that you just use frozen cooked shrimp. How easy is that? They’re coated with a garlicky, lemony butter sauce, but then something amazing happens. They’re tossed with Parmesan and bread crumbs and broiled before being lovingly placed on a bed of linguine. Something great about adding panko is that the flakes soak up some of the flavor of the sauce, making each bite even more intensely packed with insane deliciousness.
So if you’re looking for a fancy-shmancy dinner to eat with your sweetie or a simple weeknight dinner to feed the fam, you gotta try this Shrimp Scampi!
- ¼ cup butter
- ¼ cup olive oil
- 3-4 tsp minced garlic
- 1 red, orange, or yellow bell pepper, julienned
- ½ red onion, thinly sliced
- 1 lb. frozen, cooked large or jumbo shrimp
- Juice of 1 lemon
- ½ cup chicken broth or white wine
- ¼ tsp oregano
- Red pepper flakes, to taste
- Pepper, to taste
- ¼ cup panko bread crumbs
- ¼ cup chopped fresh parsley
- Cooked angel hair pasta
- In a large skillet over medium-high heat, combine butter and olive oil. Add garlic and saute until garlic is fragrant.
- Add bell pepper and red onion and saute until vegetables are crisp-tender.
- Add shrimp, lemon juice, chicken broth, oregano, red pepper flakes, and pepper and toss to combine. Allow to heat through.
- Heat oven to broil. Pour shrimp mixture into a 13x9" baking dish. Add Parmesan and panko and toss to combine. Broil 2-3 minutes or until heated through. Remove from oven.
- Serve over pasta and sprinkle with parsley. Enjoy!
