Do you crave pasta? I crave it pretty often, but sometimes I don’t want to put in the effort to make it. Ya know? Boiling the pasta can be a chore, right? Especially with the weather being so warm. I want my stove on as little as possible. All I really want to do is find something fresh in my fridge that I can throw together in 10 minutes. So when I find a recipe for pasta that I can whip up without too much effort…I’m definitely interested.
This Quick Linguine Carbonara is (you guessed it!) super fast and easy to make. Like, take the kids to the pool and have them swim until they’re exhausted. Then pile them in the car, hurry home, and make this delicious dish lickety-split! It’s linguine noodles tossed with peas, bell pepper, and crispy bacon, all in a creamy sauce. What I love about this recipe, which I found on the Taste of Home website and altered a bit to taste, is that it’s a lightened up version of carbonara. It uses 2% evaporated milk instead of heavy cream, which is great. Because who wants a rich and heavy meal in the summer? Go for easy this weekend and make this Quick Linguine Carbonara for you and your family. Then get outside and enjoy some fun in the sun!
- 8 oz. linguine noodles
- 4 bacon strips
- 1 large egg
- 1 cup 2% evaporated milk
- ¼-1/2 cup chopped red bell pepper
- ½ cup frozen peas, thawed
- Red pepper flakes, to taste
- ⅛ tsp pepper
- 2 tsp minced garlic (about 2 cloves)
- ½ cup shredded Parmesan, divided
- Cook linguine according to package directions.
- Meanwhile, arrange bacon strips on a microwave-safe plate covered with paper towels. Cover bacon with a paper towel and microwave for about 4 minutes or until crisp. Remove strips to cool. Then chop into bits and set aside.
- Meanwhile, in a small saucepan, whisk egg, evaporated milk, bell pepper, peas, red pepper flakes, pepper, and garlic. Cook and stir over medium-low heat until mixture thickens enough to coat the back of a wooden spoon.
- Stir in ¼ cup Parmesan and bacon; remove from heat.
- Drain linguine; return to pot. Add sauce and toss to coat. Sprinkle with remaining cheese and divide into 4 bowls. Enjoy!
