Have you ever had Pork Dan Dan Noodles? I’ve had them a few times and they were delicious. But for some reason, I never thought of making them at home until now. Seeing as they’re pasta (YES!) with Asian flavors (DOUBLE YES!), I figured it was high time.
When I told my husband what I was making, he was like, “Whaaaa?” Come to find out, “dan dan” means noodles carried on a pole. Whaaa? indeed. It refers to the carrying pole street vendors used to carry the noodles and sauce to sell to passersby.
Regardless of what Dan Dan means, these Pork Dan Dan Noodles are damn, damn good. They’re fettuccine noodles tossed with ground pork, fresh veggies, and a sweet-spicy peanut sauce. The sauce has just the right amount of heat to tickle your taste buds without overpowering them, so this dish is great for kids, too. Best part? You can whip these Pork Dan Dan Noodles up in 20 minutes, so they’re perfect for crazy, want-to-pull-your-hair-out-or-scream-into-a-pillow nights. You know the ones I’m talking about.
So skip takeout, grab whatever veggies you have on hand, and whip these delicious homemade Pork Dan Dan Noodles up in a flash.
- ½ cup chicken broth
- ¼ cup soy sauce
- 2 Tbsp sugar
- 1 Tbsp creamy peanut butter
- 2 tsp cornstarch
- 2 tsp sesame oil
- ¼ tsp crushed red pepper
- 8 oz. ground pork
- ½ tsp powdered ginger
- 2 garlic cloves, minced (2 tsp)
- ½ 14-oz pkg coleslaw mix
- 1 bell pepper, chopped
- ½ large yellow onion, chopped
- 3 green onions, sliced
- Salt and pepper to taste
- 1 9-oz pkg fresh fettuccine
- In a small bowl, whisk together the broth, soy sauce, sugar, peanut butter, cornstarch, sesame oil, and crushed red pepper. Set aside.
- Heat a large skillet over medium-high heat. Add pork, ginger, and garlic and cook until pork is browned, about 6 minutes. Transfer pork to a bowl.
- In same skillet, cook coleslaw, stirring frequently, for about 3 minutes. Add bell pepper and onion and continue cooking until coleslaw is lightly browned.
- Meanwhile, cook fettuccine in a stock pot according to package directions.
- Return pork to skillet. Stir in broth mixture and heat to boiling. Reduce heat to medium and simmer, uncovered, until sauce has thickened slightly, about 2 minutes.
- Drain fettuccine and combine with pork. Sprinkle with green onions and serve.
