Hi, friends! How are you enjoying life after the long weekend? Memorial Day weekend is usually the weekend the hubs and I celebrate our anniversary. And this past weekend was our 15th. Crazy how time flies, right?! It passes so quickly, yet I have trouble remembering what it was like to sleep in on the weekends. Weekdays, weekends, they’re all the same for my 1-year old, who wakes up at about 6:30 EVERY. MORNING. #ForeverExhausted
It’s all good, though, because I find my relief in jewelry. I have a couple friends who sell Paparazzi jewelry and I have a serious addiction. Because they’re good at selling it—and I’m too good at buying it. I mean, when each piece is only $5, I’m always asking myself, Why not? But when you buy 8 pieces it kinda adds up. And then I look at my bank account and think, Ahhhh, that’s why. My friend and I joked that it’s okay because we don’t have to eat, right? 🙂 Or we can just eat ramen.
Which brings me to this Peanut Pork and Noodles. YES. It is SO freaking good, so easy to make, AND…you can make it with that package of ramen you have sitting in your pantry for occasions when you overspend on jewelry. I chose to use my package of yakisoba noodles that JSL Foods graciously gave me after I won second place for this Coconut Curry Chicken Noodle Soup in their Fortune Brand Recipe Contest. The yakisoba noodles seriously made dinner prep a BREEZE because they’re already cooked. Now, this Peanut Pork and Noodles does call for other ingredients, but I’m betting you have many of them in your pantry already. Like peanut butter, soy sauce, and honey to name a few. I used carrots, onions, and sugar snap peas for my veggies, but you can use whatever you have on hand. Either way, you’ll have tender pork, crunchy veggies, and slurpy noodles coated in a yummy, peanut-based sauce ready in less than 30! This recipe is super family-friendly and isn’t spicy at all. However, if you want to add some heat, you can drizzle some sriracha in your sauce or sprinkle in some red pepper flakes. YUM!
- 1 pkg ramen or yakisoba noodles
- 2 tsp cornstarch
- ½ cup water
- ¼ cup creamy peanut butter
- 2 Tbsp soy sauce
- 1 Tbsp honey
- ½ tsp garlic powder
- ⅛ tsp ground ginger
- 1 lb boneless pork chops or pork tenderloin, cubed
- 3 tsp sesame oil, divided
- 1 cup baby carrots, sliced
- 1 medium onion, halved and sliced
- 1 cup sugar snap peas, sliced
- Cook ramen according to package directions or prepare yakisoba noodles in microwave for stir-fry method.
- In a small bowl, combine cornstarch and water until smooth. Whisk in peanut butter, soy sauce, honey, garlic powder, and ginger. Set aside.
- In a large skillet or wok coated with cooking spray, stir-fry pork in 2 tsp sesame oil until no longer pink. Remove and keep warm. Add remaining 1 tsp sesame oil to skillet and saute carrots, onions, and sugar snap peas until crisp-tender.
- Stir sauce and add to pan. Bring to a boil, stirring constantly, until thickened (about 2 minutes).
- Add noodles and return pork to pan. Stir and cook until noodles are heated and sauce coats everything evenly. Enjoy!
