Guys, Mother’s Day is just around the corner. I can hardly believe it! I love Mother’s Day because (knock on wood), the weather here is usually pretty mild and warm. I hope I didn’t jinx it by saying that. But the main reason I love Mother’s Day is because it’s a chance to celebrate mothers everywhere—especially my own. One of my most touching memories of my mom is actually not a memory for me at all. But it’s the perfect example of how my mom loves me and would do anything for me.
The reason I don’t remember it is I had just been in a motorcycle accident. I was wearing a helmet, but it was a little big for me and my head kinda rattled around in it. For weeks after the accident, even though I was awake and could speak, I didn’t know where I was, much less why I was there. I would refer to myself by name (like “Erin wants to go to sleep now”) and was very, very blunt with people. And I don’t remember any of it. Because of my head injury, my balance was off and I couldn’t walk without assistance. However, I also wanted to get up on my own and would try to at any and all hours of the day. My mom didn’t trust that the hospital staff would be able to watch me 24/7 to make sure I didn’t try to get up on my own, so after much pleading, she convinced them to let her have a cot next to my bed so that if I woke up in the middle of the night, she’d be there in case I tried to walk on my own. She slept in the cot next to my bed every single night until she knew I was better and could walk on my own. Just one of the thousands of ways my mom has let me know she loves me.
So it’s great to have a day to celebrate her and the other important women in my life. And what better way to do that than have a yummy brunch? When it comes to breakfast or brunch (pretty much anything before lunch…what can I say? I’m not a morning person) I like quick, easy, and delicious. That’s what I love about these cute-as-a-button Mini Ham and Egg Frittatas. They’re baked in muffin tins and everyone can make their very own and throw whatever they want in them. Cheese, bacon, bell peppers, onion, jalapenos, tomatoes, mushrooms, sausage….the possibilities are endless. This Mother’s Day, make your mom a brunch she’ll love with these mini frittatas filled with all of her favorite things. Except if she loves chocolate. You have to draw the line somewhere. 🙂
- 12 thin slices deli ham
- 12 large eggs
- ½ large onion, diced
- ¾ cup Colby Jack cheese, shredded
- ¼ cup Pepper Jack cheese, shredded
- 12 grape tomatoes, sliced
- ¼ cup chopped fresh parsley
- Preheat oven to 350 degrees. Spray 12 muffin cups with cooking spray.
- Line each cup with a ham slice, arranging to fit.
- In a small bowl, beat an egg, and then pour it into a muffin cup. Sprinkle in some onion, some of the cheeses, and a sliced grape tomato. Continue until each muffin cup is filled. (You can mix all the eggs together with the veggies and cheese and divide the mixture into the cups for a faster method.)
- Bake 20 to 25 minutes until eggs are set.
- Remove from muffin tins (I used a butter knife to help loosen them) and sprinkle with parsley. Serve immediately.
