When I was little, my favorite after-school snack was what my mom called “peanut butter and marshmallow” sandwiches, which were creamy peanut butter and marshmallow creme on soft white bread. But one day we ran out of white bread and my mom’s ingenious idea was to spread the PB and marshmallow creme on RITZ Original crackers. The result? A cute little sandwich that was both delicious and fun to eat. I was hooked. The combo of the crispy, salty RITZ Original crackers with the rich and creamy peanut butter and the gooey marshmallow creme was unique and out-of-this-world yummy.
To my astonishment and—admittedly—slight disappointment, I learned a few years ago that the beloved “peanut butter and marshmallow” sandwiches from my childhood were not something my mom just came up with. No, they’re actually a thing, and they’re called “fluffernutters.” But no matter what you call the delicious combo of PB and marshmallow creme, the best way to serve it is atop a RITZ Original cracker. And since everything is made better with chocolate, I’ve taken my childhood favorite and added homemade chocolate sauce to bring you Mini Chocolate Fluffernutter Sandwiches. These are truly easy and fun to make and a great way to get the kids involved! They’ll love snacking on their concoctions.
I found all the ingredients to make these Mini Chocolate Fluffernutter Sandwiches at my local Walmart, where I also attended a demonstration to learn how to create yummy and easy snacks using RITZ Original Fresh Stacks and Peter Pan Simply Ground Peanut Butter.
For my recipe, I used RITZ Original Fresh Stacks, but the Fresh Stacks are available in a variety of flavors. The buttered popcorn gal in me is way excited to try the RITZ Ultimate Butter Fresh Stacks, which are available at Walmart while supplies last. What’s great about RITZ Original Fresh Stacks is they’re packaged in smaller stack packs, so they’re easy and convenient to take with you so you can snack while on the go.
I also used the Peter Pan Simply Ground Peanut Butter in Honey Roast flavor. And friends, I have to say this is my new favorite peanut butter. When I was little, my mom always had to buy two kinds of peanut butter—crunchy for my dad and creamy for me (peanut butter and marshmallow sandwiches require the creaminess). But whether you’re Team Crunchy or Team Creamy, this peanut butter is for you. Like it says on the jar, it’s “creamy with a bit of crunch”—just enough crunch to give it a unique and wonderful texture but still satisfy the creamy PB fan in me. Plus, it has no artificial flavors, colors, or preservatives.
So you ready for the how-to? You’ll love how easy these Mini Chocolate Fluffernutter Sandwiches are to make—and how delicious they are to eat! So let’s get to it.
They require just a handful of ingredients, many of which you probably already have in your pantry and fridge.
First, spread the Peter Pan Simply Ground Peanut Butter on your RITZ Original Fresh Stack crackers.
Then, pipe (or spread) the marshmallow cream on top of that. I’ve found piping is MUCH easier and cleaner than spreading it.
Set them onto a plate while you make your chocolate sauce.
For the sauce, combine chocolate chips and butter in a microwave-safe bowl and zap them in the microwave for 20 seconds.
Stir in the heavy cream and vanilla…
and zap for another 10 seconds or so, until chips are melted. Stir until the chocolate sauce is smooth.
Using a spoon, drizzle the chocolate sauce over the marshmallow creme.
Then top each with another cracker and you’re done! Now you and your family can enjoy delicious, cute-as-a-button Mini Chocolate Fluffernutter Sandwiches that are ready in 10 minutes! - 16 RITZ Original Fresh Stack crackers
- ¼ cup Peter Pan Simply Ground Peanut Butter (I used Honey Roast)
- ¼ to ⅓ cup marshmallow creme
- 6 Tbsp chocolate chips (I used milk chocolate)
- 2 Tbsp butter
- 2 Tbsp heavy cream
- 1 tsp vanilla
- Spread ½ Tbsp peanut butter onto 8 crackers. Pipe or spread ½ Tbsp marshmallow creme over the peanut butter and set crackers on a plate or cookie sheet.
- In a medium microwave-safe bowl, combine chocolate chips and butter. Microwave on high for 20 seconds.
- Stir in heavy cream and vanilla. Microwave for an additional 10 seconds or until chips are melted. Stir until chocolate sauce is smooth.
- Using a spoon, drizzle chocolate sauce over prepared crackers. Top each with another cracker to make a sandwich and enjoy!
