As the hubs likes to remind me often, football season is officially upon us. Which means fantasy football and frenzied fans. And lots of game parties with tons of yummy dips, chips, and appetizers. That’s why I’m so excited about the opportunity I had to create these Mini Chicken Meatball Spaghetti Pies for the Fortune Asian Noodle Blogger Recipe Challenge! Now, I know what you’re thinking. An Italian-inspired dish for an Asian noodle recipe challenge? You bet! These Mini Chicken Meatball Spaghetti Pies combine Asian noodles with Italian pasta sauce for a flavor fusion you’ll love!
What’s great about Fortune yakisoba stir fry noodles is they’re so easy to make and you can use them for any type of dish your heart desires. Best part? They contain 100% natural ingredients and are precooked and steamed to perfection so they’re ready lickety-split for whatever sauce and goodies you can dream up to throw in. In addition to the complementary packs JSL Foods sent me for the contest, I got a few more at the store because noodles are pretty much my favorite thing in the history of eternity. And ones that are ready in 3 minutes flat? I am SO THERE.
These Fortune noodles are available at lots of stores, like Banners, Macey’s, Dick’s, Lin’s, Fresh Market, Harmon’s, Smiths, Associated Food Stores, WinCo, and Target. So make sure to grab a couple bags on your next shopping trip. I found mine in the refrigerated section by the produce.
Now about these cute-as-a-box-of-puppies Mini Chicken Meatball Spaghetti Pies. They are AMAZING. They’re the perfect appetizer for any party—be it sport or holiday-themed. After all, the holidays are (gasp!) only a few short months away. And it’s good to plan ahead. These pies are a snap to make and are guaranteed to be a hit at your next party. They’re also an easy, kid-friendly weeknight dinner that’s fun to eat! Sound too good to be true? Check out how easy they are.
First, preheat your oven to the temperature suggested for your meatballs and bake them according to package directions. Meanwhile, heat the Fortune noodles in the microwave to help soften and separate them. Then, in a medium bowl, combine them with the egg, milk, Parmesan, salt and pepper, and garlic. Spray muffin tins with cooking spray and divide the noodle mixture into each tin.
Top each tin with one meatball.
In a medium saucepan over medium heat, combine the pasta sauce and pesto sauce and heat until warm. Then, spoon about 1/8 cup of sauce mixture over each meatball.
Bake in 350-degree oven for about 12 minutes. Sprinkle with remaining cheese and bake an additional 2 minutes, until cheese is melted. Top with fresh basil, if desired.

- 12 frozen chicken meatballs
- 2 packages Fortune yakisoba stir fry noodles (any flavor)
- 2 eggs, beaten
- 2 Tbsp milk
- 2 tsp minced garlic
- Salt and pepper, to taste
- ½ cup grated Parmesan
- 1 cup jarred pasta sauce
- ½ cup prepared pesto
- ½ cup shredded Italian blend cheese
- Fresh basil, cut into long, thin strips (chiffonade)
- Cook meatballs in oven according to package directions, turning halfway through. Remove from oven. Keep oven on and heated to 350 degrees.
- Meanwhile, open each package of noodles and save seasoning packets for future use. Heat each package in microwave for 1 minute to loosen noodles.
- In a medium bowl, combine noodles, eggs, milk, garlic, salt and pepper, and Parmesan. Set aside.
- Combine pasta sauce and pesto in medium saucepan over medium heat and cook until heated through.
- Spray a muffin tin with cooking spray and divide noodles evenly into the muffin cups. Press each pile lightly with a spoon, then top with one chicken meatball.
- Spoon about ⅛ cup (2 Tbsp) of sauce over meatballs. Bake in 350-degree oven for 12 minutes. Sprinkle with Italian blend cheese and bake for 2 minutes more, until cheese is melted.
- Remove from oven and cool for about 5 minutes. Using a butter knife, loosen sides of each mini pie. Remove and top each mini pie with fresh basil.
