With lime, cilantro, and a hint of Mexican seasonings, Lime Cilantro Rice is so easy to make and the perfect side for Cinco de Mayo!
Hey there, friends! It’s sure been awhile and it’s all due to the cutest little cuddle bug named Jade Monroe. I had our third daughter on Saturday, April 15th and it’s been a crazy, exhausting, wonderful experience ever since. Like our second daughter, she was born with a full head of hair and is such a good baby (knock on wood).
We had a bit of a scare in the hospital when her blood sugar wasn’t staying up and she had to be in the NICU for a couple days. But then it started to regulate and I couldn’t contain my excitement. In fact, one of the nurses said she was surprised I’d had a c-section just a couple days earlier because I was up and walking around and chipper. I told her it was because my baby was getting out of the NICU. If that won’t get a mama up and about, I don’t know what will!
Now, let’s talk about food. I’ve been posting a lot of Keto-friendly, low-carb meals and will continue to do that–especially now that I’m ready to take off some post-baby weight. But I am going to take a little detour for a second because Lime Cilantro Rice (or Cilantro Lime Rice:) ) is just about the best side to accompany a burrito or taco, or to add to your hearty sweet pork or chicken salad. It’s the perfect side dish for Cinco de Mayo. Can you believe that’s only a few short weeks away?! And this Lime Cilantro Rice is super easy to make because you just use the easy peasy instant white rice and then add your yummy Mexican seasonings, some onion and garlic, lime juice and zest, and cilantro. YES. No need to go to Cafe Rio or Costa Vida or Chipotle to get your Lime Cilantro Rice fix. Just whip it up at home!
- ½ medium onion, chopped
- 2 tsp minced garlic (about 2 cloves)
- 1 Tbsp butter
- 2 cups instant white rice
- 1 cup water
- 1 cup chicken broth
- 1 tsp lime zest
- 2 Tbsp lime juice
- 2 Tbsp cilantro, chopped
- 1 tsp cumin
- In a saucepan over medium-high heat, saute onion and garlic in butter until onion is translucent.
- Add rice, water, and broth and cook rice as directed on package.
- Add lime zest, juice, cilantro, and cumin, stirring until fully incorporated.
