Grilled Buffalo Chicken Nachos are perfect for any outdoor BBQ! They’re crispy, cheesy, hearty nachos topped with shredded Buffalo chicken, cool blue cheese dressing, and chopped carrots, celery, and green onions.
Who here likes nachos? EVERYONE. Who likes to crank their oven up to high heat in the middle of summer? That’s right—NO ONE. So if you want to satisfy your jonesing for some crispy, crunchy, cheesy nachos sans stove, you gotta try my easy and incredible Grilled Buffalo Chicken Nachos.
They’re topped with spicy shredded Buffalo chicken, melty mozzarella, cool blue cheese dressing (or Ranch if you’d rather!), and chopped carrots, celery, and green onions. I mean, DANG. What’s NOT on these nachos, am I right? And the best part is you grill them, so you don’t have to leave your guests hanging while you tediously tend to your nachos in your oven.
Let me tell you about the AMAZING Buffalo sauce I used for these Grilled Buffalo Chicken Nachos. I’m talking about Budweiser’s new Brewmaster’s Premium Wing Sauce. They have two flavors: hot and mild. And I actually used both. I cooked my chicken in the hot and drizzled the mild on my nachos, so you can mix and match or just use one of the wing sauces.

So you ready to get your nacho grillin’ on? Let me show you how!
First, grab your ingredients.
Then, cook your chicken in the Budweiser Brewmaster’s Premium Wing Sauce of your choice. I pressure-cooked mine in my Instant Pot, but you can also slow cook it.
While it’s cooking, you can chop up your veggies.
Take your chicken out of the Instant Pot or slow cooker and shred it. Then return it to the pot to toss it in the sauce again. Heat your grill to medium-high heat. Then spread half of your tortilla chips in a disposable 13×9″ pan.
Sprinkle one third of the mozzarella evenly over the chips, then add half of your chicken. For extra zing, you can drizzle some wing sauce over the chips as well.
Then, spread another layer of chips down, followed by another third of the mozzarella and the remaining half of the chicken. Cover that with the remaining third of the mozzarella and drizzle more wing sauce over the top. Put the nachos on your grill. Turn your grill off and let the nachos rest, covered, for 5 minutes, or until the cheese is melted.
Take the nachos off the grill and sprinkle them with the carrots and celery, then drizzle them with blue cheese or Ranch dressing.
Top them with your green onions and voila! You’re ready to impress your guests with the most delicious, cheesy, zingy nachos they’ve ever had—no oven required!

- 3 boneless, skinless chicken breasts
- 1 bottle Budweiser Brewmaster's Premium Wing Sauce (mild or hot), divided
- 1 bag of restaurant-style tortilla chips
- 1 16-oz package shredded mozzarella
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- ½ bunch green onions, sliced
- ¼ cup blue cheese or Ranch dressing
- Place chicken breasts in Instant Pot or slow cooker. Add half of the wing sauce and if using Instant Pot, cook on high pressure for 25 minutes, allowing it to naturally release the pressure once the chicken is done. If using slow cooker, cook chicken for 2-3 hours on high.
- Once chicken is done, use two forks to shred it. Add it back into the cooker and toss it with the sauce. Set it aside.
- Heat your grill to medium-high heat.
- Arrange half of your chips in a 13x9" disposable pan. Sprinkle ⅓ of the mozzarella over the chips, then add half of the shredded chicken. Drizzle some wing sauce over it, if desired.
- Top with another layer of chips, followed by another ⅓ of the mozzarella, then the remaining half of the chicken. Sprinkle with remaining mozzarella.
- Place nachos on grill. Turn grill off and let nachos rest, covered, for 5 minutes, or until cheese is melted. Remove from heat.
- Top nachos with carrots and celery. Drizzle with blue cheese or Ranch dressing. Sprinkle with green onions. Enjoy!
