Jump to RecipeHOLY MOLY, FRIENDS! It has been a LONG time. Too long IMO. A lot has happened here since I last posted. Mostly awesome stuff (notice the new blog template–still a work in progress, but we’re getting there!) and I GOT MARRIED!
With it being the second marriage for both of us, I didn’t want to do the whole fancy white dress with a train and veil and the whole shebang. So I went for something more simple–a blush pink dress that was comfortable and, of course, let my hubby and me show off our dance floor domination. 🙂
But, as we all know, it’s FOOD that truly brings people together. I mean, who misses a business meeting when there are treats involved? Who says no to a party where there’s guaranteed to be a spread of fabulous finger foods and delectable desserts? Right, no one. With the help of our other sisters, Shannon let her incredible catering, cooking, and food prep skills shine with this drool-worthy spread of appetizers that everyone enjoyed. She also took special care to make sure everything was gluten free for my new hubby! Spoiler alert: you’re going to start seeing A LOT more gluten free recipes coming from yours truly.
The whole event was like a dream–from the food to the venue. I wouldn’t change a single thing about it.
Although it was one of the most memorable and special days of my life, there’s an important item we need to discuss. It’s this Fresh Salsa. That’s what brought you here, right?
So here’s the lowdown on this salsa. It’s so easy and so yummy, with just the right amount of spice to entice even picky eaters who don’t eat spicy stuff. PLUS it’s completely customizable. Want more spice? Throw in some more jalapeno. Want it chunkier? Don’t blend the mixture as much, or you can throw in some of the chopped roma tomatoes after you’ve blended everything else together. Whatever you do, you’ll want oodles of chips (or perhaps just a giant spoon?) at the ready so you can indulge. I’ve been obsessed with spooning it over my scrambled eggs and egg sandwich (recipe coming soon!). This salsa is so versatile, it also makes a great neighbor gift. PLUS with the Superbowl coming up in just a few weeks, you can impress your football party guests with to-die-for, totally delicious and dippable salsa. Just be ready for recipe requests!
Fresh Salsa
Ingredients
- 1 can Rotel
- 4 roma tomatoes, chopped
- 1/2 large red onion, quartered
- 3 tbsp lime juice (about 1 large lime)
- 2 cloves garlic, minced (about 2 tsp)
- 1/3 cup fresh cilantro, chopped
- 1/2 tsp cumin
- 1/2 tsp sea salt
- 1/2 large jalapeno, seeded
Instructions
- Combine all ingredients in blender or food processor and blend until combined. For chunkier salsa, don't blend as much. Or you can add some of the chopped roma tomatoes after blending.
