You always hear that breakfast is the most important meal of the day. But quite honestly, I have to force myself to make a shake on weekdays. I just don’t love breakfast—probably because I’m not a morning person and would much rather still be tucked in my bed, sleeping like a rock.
Dinner, on the other hand, is my favorite meal of the day. So when someone (gasp) suggests breakfast for dinner to me, it’s usually met with an incredulous and disgusted stare. So why, oh why, on God’s green Earth would I ever agree to have breakfast for dinner? Because of these Fluffy Buttermilk Pancakes.
The pancakes are so simple, so fluffy, and just sweet enough that you don’t need to visit the dentist after you douse them with syrup. In fact, I crave them regularly and could eat them any time of day. The other great thing about this recipe is it has you make your own buttermilk by combining milk and vinegar. I don’t always have buttermilk on hand, but I definitely always have milk and vinegar. Plus it’s a win/win because the hubs and I love them and so do our picky 2 and 4-year-old daughters. Whip ’em up today and you’ll understand why this is THE go-to pancake recipe in our house.
- 1-1/2 cups milk
- ¼ cup white vinegar
- 2 cups all-purpose flour
- ¼ cup sugar
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 2 eggs
- 4 Tbsp butter, melted
- 1 tsp vanilla extract
- Cooking spray
- In a medium bowl, whisk together the milk and vinegar. Set aside for 5 minutes.
- In a large bowl, combine flour, sugar, baking powder, baking soda, and salt.
- Whisk eggs and melted butter into milk and vinegar mixture. Stir in vanilla extract.
- Pour wet ingredients into dry ingredients and whisk until lumps are gone.
- Heat a large skillet or griddle over medium heat and spray with cooking spray.
- Pour ¼ cupfuls of pancake batter onto skillet and let cook until bubbles appear on surface of pancakes. Flip and cook until browned on other side.
- Continue until you've used up all the batter, every so often respraying the pan with cooking spray before pouring batter onto it.
