Mexican Chicken Noodle Soup

Ingredients
  • 2 Tbsp butter
  • 1 cup carrots, sliced
  • ½ yellow onion, chopped
  • 2 tsp minced garlic (2 cloves)
  • 1 package taco seasoning
  • 8 cups chicken broth
  • 2 cups cooked, cubed (or shredded) chicken
  • 1 15.25-oz can black beans, drained
  • 1 14.5-oz can diced tomatoes
  • 1 4-oz can chopped green chilies
  • 1 cup frozen or canned corn
  • 2 packages FortuneĀ® Chicken Flavor Udon Noodles
  • optional toppings: sliced lime, cilantro, shredded cheese, sliced jalapenos
Instructions
  1. In a large stockpot over medium-high heat, melt butter. Add carrots and onion. Saute, stirring frequently, until crisp-tender, about 5 minutes.
  2. Add garlic and taco seasoning and saute an additional 2 minutes.
  3. Add chicken broth and bring to a boil. Add black beans, diced tomatoes, green chilies, and corn.
  4. Add FortuneĀ® Chicken Flavor Udon Noodles and stir to separate noodles. Boil for 3 minutes, then remove from heat.
  5. Divide into soup bowls and top with sliced lime, cilantro, shredded cheese, and sliced jalapenos. Enjoy!
