1 3-4-lb. beef brisket (flat cut), cut to fit into Instant Pot, if needed
2 cups Coca-Cola®
2 cups ketchup
2 Tbsp minced onion
4 tsp minced garlic
4 tsp liquid smoke
2 Tbsp Worcestershire sauce
2 Tbsp brown sugar
2 tsp apple cider vinegar
Prepared coleslaw (optional)

Instructions
Set Instant Pot to Saute for 15 minutes. Add canola oil. When oil is hot, add one piece of brisket. Saute for 2 minutes, then flip to brown. Remove from Instant Pot and repeat with additional pieces of brisket.
Meanwhile, to make the BBQ sauce, combine Coca-Cola®, ketchup, minced onion, garlic, liquid smoke, Worcestershire sauce, brown sugar, and apple cider vinegar in a medium bowl.
Place all pieces of brisket into Instant Pot. Pour Coca-Cola® BBQ sauce over brisket.
Secure Instant Pot lid and set to Pressure Cook on high for 1 hour.
Once brisket is done cooking, allow pressure to naturally release for 15 minutes. Then carefully flip pressure switch to Venting.
Once pressure is completely released, open Instant Pot lid and remove brisket with tongs. Place pieces on a cutting board and shred with 2 forks or slice into strips.
Set Instant Pot to Saute for 10 minutes. Allow sauce to simmer for 6-10 minutes or until thickened, stirring frequently.
Add brisket pieces back into Instant Pot and toss in sauce to fully coat.
To serve, top each slider roll with brisket and prepared coleslaw (if desired). Enjoy!
