Colorful Avocado Salad

Ingredients
  • Salad
  • 1 cucumber, peeled and cut into chunks
  • 1 can black beans, rinsed and drained
  • 1 can sweet corn kernels, drained
  • 1 red, orange, or yellow bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • ½ large red onion, diced
  • 2 Tbsp jalapeno rings, finely chopped (optional)
  • ½ cup cilantro, chopped
  • Juice from 1 lime
  • 1 avocado, diced
  • Cilantro-Lime Vinaigrette
  • 2 Tbsp lime juice (2 limes)
  • 1 Tbsp chopped cilantro
  • Salt and pepper, to taste
  • 3 Tbsp olive oil
  • Dash of hot sauce (optional)
Instructions
  1. Make the salad. Combine all ingredients except for avocado in a bowl. Set aside.
  2. Make the vinaigrette. Whisk the lime juice, cilantro, salt, and pepper in a medium bowl. Slowly add olive oil, 1 Tbsp at a time and whisk well after each addition.
  3. Pour vinaigrette over salad and toss to combine. Add avocado just before serving.
