Crack egg into a shallow bowl and beat. Put flour into another shallow bowl and bread crumbs and panko in another. Line a cookie sheet with foil and place it next to the bread crumb mixture bowl.
Add chili powder, cumin, garlic powder, oregano, paprika, and salt to bread crumbs and stir until combined.
Unwrap each mozzarella stick, arrange sticks into an even pile, and cut sticks in half so that you have 24 pieces.
With one hand, dip each stick into the flour, shaking off the excess, then into the egg. Using your other hand, dip the stick into the bread crumb mixture. I buried each one and sprinkled crumbs over them to really get a good coating. Place coated sticks onto cookie sheet.
Place cookie sheet with sticks in the freezer and freeze for eat least 30 minutes.
Set oven to 400 degrees. Place pan in oven and bake sticks for 5 minutes. Flip each stick over and bake for an additional 5–6 minutes. You'll know they're ready when you lightly squeeze one and it's soft and gooey.
Remove from oven and place sticks onto a serving platter immediately to avoid further cooking.* Serve with Ranch or your favorite dip and enjoy!
Notes
*When sticks cool, they'll begin to harden. If they do, stick them in the microwave for 10 seconds to refresh the gooey cheesiness. :)
