I get it. Sometimes you just need to go the takeout route. When you’ve had a long and crazy day and you’re so exhausted you could sleep standing up and you have a headache and the kids are screaming and there are toys all over the floor and you forgot to wash that shirt you need for tomorrow and why is the floor so sticky and there’s chocolate smeared on the TV and walls…whoa. I’m out of breath. But you get the gist. You know what I’m talking about cuz we’ve all had those days. They’re like a daily occurrence for me. So I totally get how takeout is often the best solution. But having a recipe that’s quick and easy to whip up and better than takeout could ever dream of being? That’s what I call winner, winner, Sweet and Sour Chicken dinner.
Juicy chicken and crunchy veggies nestled in a delicious sweet and sour sauce and draped over a bed of rice is what I’m talkin’ bout. That Chinese place down the street’s got nothing on this bad boy. Whip it up in less than 30 and you’ll have a dinner your whole family will enjoy…and more time to binge watch Supernatural on Netflix. I know it’s not new, but it’s new to me and I’m freaking addicted. Because Jared Padalecki and Jensen Ackles. They’re a whole different kind of yummy. 😉
- SAUCE:
- ½ cup ketchup
- ¼ cup lemon juice
- 2 Tbsp rice vinegar
- ½ cup crushed pineapple in juice
- ⅓ cup brown sugar
- 1 tsp garlic
- STIR-FRY:
- 3 Tbsp canola oil, divided
- 1 lb. boneless skinless chicken breasts, cut into bite-sized pieces
- 3 Tbsp flour
- ½ tsp salt
- ½ tsp pepper
- ½ tsp garlic powder
- ½ large onion, cut into wedges
- 1 red bell pepper, diced
- 3 celery ribs, sliced
- ½ cup shredded carrots
- Scallions, sliced, for topping (I used 3)
- Hot cooked rice
- Combine sauce ingredients in a medium bowl and set aside.
- In a large ziploc bag, combine chicken, flour, salt, pepper, and garlic powder. Shake and toss well to coat chicken.
- In a large skillet over medium-high heat, heat 2 Tbsp canola oil. Add chicken and cook until evenly browned on all sides. Remove from heat.
- Heat remaining 1 Tbsp oil in same skillet and add onions and peppers. Saute until crisp-tender, then add carrots.
- Return chicken to skillet and toss with veggies to combine. Whisk sauce and pour into skillet. Bring to a boil and cook chicken and veggie mixture in sauce until heated through.
- Serve over white or brown rice and sprinkle with scallions.
