Double Chocolate Peanut Butter Cookie Bars are lusciously soft and gorgeously gooey peanut butter-spiked cookie bars loaded with melty milk and semisweet chocolate chips!
Just look at that ooey gooey deliciousness. These Double Chocolate Peanut Butter Cookie Bars are totally worth the temporary stray from my diet. Cuz you need to have a little indulgence every once in awhile. You know? And when you do indulge, you wanna make darn sure the treat is worth it. Not a little cookie from a package and not a piece of candy from the gas station. No, no. We’re talkin’ homemade, luscious lovin’ from the oven. And these babies deliver, my friends. Well worth the sacrifice.
For these cookies, I ampted up the chocolate chip cookie base with peanut butter because CHOCOLATE. AND. PEANUT BUTTER. ‘Nuff said. And I used a bag of milk chocolate chips and added some mini semisweet chocolate chips for an extra shot of melty chocolate because it’s chocolate for crying out loud. AND because having a double shot of it is perfectly acceptable and you won’t get pulled over for a DUI. 😉
The key to these gooey lovelies is NOT overbaking them. Next to labor, that was like the hardest thing I’ve ever had to do. “Really?! I should take them out now??” The me before I made these bars had to make sure every cookie, cake, and brownie I made was fully baked in the center. But the post-cookie-bar me has seen the light, I’m happy to report. I drank the red Kool-aid, I’m converted, and I’m never looking back.
These Double Chocolate Peanut Butter Cookie Bars are the perfect dessert for potlucks, parties, game day, or a Friday night treat when you just want to hoard them for yourself share them with the fam.
- 2-1/4 cups flour
- 1 tsp baking soda
- 1 tsp salt
- ¾ cup butter, softened
- ¼ cup creamy peanut butter
- ¾ cup sugar
- ¾ cup brown sugar
- 1 tsp vanilla
- 2 eggs
- 1 package milk chocolate chips
- ½ package mini semisweet morsels
- Preheat oven to 350 degrees. Grease a 9x13 baking pan and set aside.
- In a medium bowl, whisk together the flour, baking soda, and salt.
- In a large mixing bowl, beat together the butter, peanut butter, sugar, brown sugar, and vanilla until smooth and creamy. Add eggs, one at a time, until fully incorporated.
- Gradually add flour mixture, beating well after each addition. Stir in the milk chocolate chips and half of the mini morsels.
- Spread batter into prepared pan. Top with remaining morsels.
- Bake at 350 degrees for 23 minutes. Remove and place on a cooling rack to cool completely. Cut into individual squares and watch them disappear! 🙂
