So here I sit, in Dreamland, reminiscing about this gorgeous and incredibly satisfying Colorful Avocado Salad. I’m kinda sorta in love with it. The wonderful variety of textures, the freshness, the zesty and unique flavors…
This beauty is a cinch to throw together and the perfect healthy side dish for a summer cookout. I mean, imagine a great big bowl of this Colorful Avocado Salad sitting in the center of a picnic table. You with me? Maybe you have some BBQ chicken breasts alongside, or some saucy baby back ribs…or better yet, a couple grilled New York strips. Wow. I don’t know about you, but my weekend plans just got a whole lot more exciting. Saturday dinner? Check.
Chances are, you already have a lot of the ingredients for this salad in your pantry and fridge. Cool, crisp cucumbers. Hearty black beans. Juicy cherry tomatoes. Crunchy corn kernels. Spicy red onion and jalapenos. Sweet and crunchy bell peppers. All tossed in a zesty cilantro lime vinaigrette. Summer salads never looked or tasted so good.
- Salad
- 1 cucumber, peeled and cut into chunks
- 1 can black beans, rinsed and drained
- 1 can sweet corn kernels, drained
- 1 red, orange, or yellow bell pepper, diced
- 1 cup cherry tomatoes, halved
- ½ large red onion, diced
- 2 Tbsp jalapeno rings, finely chopped (optional)
- ½ cup cilantro, chopped
- Juice from 1 lime
- 1 avocado, diced
- Cilantro-Lime Vinaigrette
- 2 Tbsp lime juice (2 limes)
- 1 Tbsp chopped cilantro
- Salt and pepper, to taste
- 3 Tbsp olive oil
- Dash of hot sauce (optional)
- Make the salad. Combine all ingredients except for avocado in a bowl. Set aside.
- Make the vinaigrette. Whisk the lime juice, cilantro, salt, and pepper in a medium bowl. Slowly add olive oil, 1 Tbsp at a time and whisk well after each addition.
- Pour vinaigrette over salad and toss to combine. Add avocado just before serving.
