What’s this? Another coconut recipe?? I told you I was obsessed. And speaking of obsessed…man, oh man. I am sorrynotsorry that I know about this recipe for Coconut Caramel Popcorn.
First of all, I am a HUGE popcorn fan. And if I keep eating this Coconut Caramel Popcorn, I will literally be a huge popcorn fan. Do you all love popcorn? Every time I walk into a movie theater, no matter if I’ve just eaten a huge meal, I still want popcorn. Something about the smell just draws me in…
Although I hardly ever make it at home because I don’t have an air popper (the shame!!). But a friend loaned me hers for a popcorn fundraiser we’re doing at my church, so I had to try out the caramel popcorn recipe we were thinking of using to see what it was like. I found the recipe in a community cookbook my mother-in-law has (thanks, Julie Acomb!).
I just so happened to have all the ingredients on hand. Plus, I was at home BY MYSELF with no kids so I could play the corn popping maniac for awhile without interruption. So I whipped up a batch in like 3 minutes and….wow. I could not stop eating it.
I mean, the caramel is the easiest thing ever to make, which is good and so very, very bad. We’re talkin’ butter, brown sugar, and marshmallows. Melt them together over the stove and pour the caramel over your popcorn and toss to combine. That’s it. You got it. Leave no piece of popcorn uncoated. Then sprinkle with coconut flakes and voila! You’ll have the perfect movie munchie or anytime snack to satisfy that popcorn craving. Fair warning: you will NOT want to share.
BTW, for this recipe I used mushroom popcorn kernels, which are buggers to find. I got mine at Orson Gygi in Salt Lake. They’re bigger and best to use when you’re going to be adding coating to your popcorn.
- ½ cup corn kernels, popped (about 8 cups)
- ½ cup butter
- ½ cup brown sugar (I used dark)
- 7 large (or 45 mini) marshmallows
- ¼ cup coconut flakes
- In a medium saucepan over medium heat, melt butter, brown sugar, and marshmallows until completely melted, stirring to combine.
- Pour over popped corn and stir well to combine. Add coconut flakes and stir until fully incorporated.
