So you know how I said awhile back that I’ve been putting coconut in everything? Totally not lying. Plus this is the web and everything you read on it is true. :-0 I threw coconut in this moist and delicious bound-to-be-your-favorite Coconut Banana Bread. But this breaaaaaaddddd, guys. I mean, banana bread is GOOOOD. But this isn’t just any ol’ banana bread. It’s super moist and so full of that wonderful bananaliciousness we all know and totally love. Even without the coconut flakes, this is hands down my favorite banana bread recipe. Ever. But throw in the coconuts and you have such a unique and amazing party-in-your-mouth flavor you have to experience to believe. Eat this for breakfast, eat it for lunch or for a snack. Midnight banana cravings anyone? Okay, maybe Chunky Monkey ice cream wins for the midnight munchies. But that’s okay. Because for the rest of the day, we got you covered with this Coconut Banana Bread. Slather some butter on a slice or enjoy it all by its glorious self.
- 1 tsp lemon juice
- ¼ cup milk
- ½ cup butter, softened
- ½ cup sugar
- ½ cup brown sugar
- 2 eggs
- 1 tsp vanilla
- 2 cups mashed bananas (about 3 large)
- 2 cups flour
- 1-1/2 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- 1 cup coconut flakes
- Preheat oven to 350 degrees. Grease an 8x4x3-inch loaf pan. (I use softened butter and just spread it with a paper towel.)
- In a small bowl, combine lemon juice and milk. Stir to mix well. Set aside.
- In an electric mixer, cream together the butter and sugars until smooth. Add eggs and mix until fluffy. Mix in lemon juice mixture, bananas, and vanilla.
- In a medium bowl, combine dry ingredients. Add flour mixture to wet ingredients and mix well.
- Add coconut flakes and mix until flakes are fully incorporated.
- Pour into prepared loaf pan and bake for one hour or until toothpick inserted comes out clean. Do not over bake!
