My younger, adolescent self would agree. I mean, PB&Js are the classic school lunch. But my grown-up, more mature and experienced self knows that chocolate and peanut better is WAY better. Wouldn’t you agree?
That’s why Reese’s peanut butter cups are heavenly. So of course, a chocolate cookie that blends chocolate chips with peanut butter that also happens to be stuffed with what? Peanut butter cups? You heard me. Of course it’s D freaking LICIOUS. And these yummy lovelies are crispy on the outside and chewy on the inside. What more could you ask for in a cookie? Grab a glass of milk and devour make a batch of these Chocolate Peanut Butter Cup Cookies today and TRY not to eat five in one sitting.
- 1¾ cups all-purpose flour
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup butter, softened
- ⅓ cup creamy peanut butter
- ¾ cup packed brown sugar
- 1 egg
- 1 teaspoon vanilla
- 1 cup milk chocolate morsels
- 25 miniature Reese's peanut butter cup candies, coarsely chopped and divided
- Preheat oven to 350°F.
- In a medium bowl, combine flour, baking soda, and salt; mix well.
- Put chocolate chips in a microwave-safe dish and microwave until smooth, heating in 20-second intervals and stirring after each time.
- In a mixing bowl, beat butter, peanut butter, and sugar until creamy. Add egg and vanilla; beat well. Stir in melted chocolate; mix until well blended.
- Add flour mixture; mix well. Mix in all but ½ cup peanut butter cup pieces (I just "kneaded" them in with my hands).
- Using a cookie scoop, drop dough onto a baking sheet lined with parchment paper, placing about 2 inches apart. Roll into balls with hands, if needed.
- Press 7-8 pieces of candy into each scoop of dough, flattening balls slightly.
- Bake 18-20 minutes or until cookies are almost set and cracked on top. Cool 5 minutes on pan; transfer to cooling racks.
