Spend any time looking through my dinner recipes and you’ll see a common theme. Most of them are quick and easy, weeknight-friendly dinners. Cuz I’m all about easy, my friends. And one of the best ways to make a yummy, one-pot, super-easy meal that requires little cleanup is to make a stir-fry. Plus, it’s a great way to use up any veggies you have on hand. AND you get to spoon it onto a bed of rice. And I am pretty much obsessed with white rice. Cue the delicious Chinese Tomato Beef.
The tender beef strips, combined with fresh, sliced tomatoes and onion all in a rich and savory sauce is beyond amazing. Top with sliced green onions and fresh tomatoes and you have at your fingertips (or, at the end of your fork) a meal bound to become a staple and family favorite on busy nights. I know tomatoes in a stir-fry might seem odd, but you have to try it. You’ll never want to go back.
- 1 lb sirloin steak, thinly sliced
- 3 Tbsp soy sauce, divided
- 2 Tbsp rice vinegar, divided
- 2-3/4 tsp sugar, divided
- 3 Tbsp water, divided
- 4-1/2 tsp cornstarch
- ⅓ cup chicken broth
- ¼ ketchup
- 1 tsp Sriracha sauce
- 1 tsp sesame oil
- 3 Tbsp canola oil, divided
- 1 tsp minced garlic
- 1 medium onion, sliced into wedges
- 1 green bell pepper, sliced into 1-inch chunks
- 1 large tomato, cut into wedges
- 4 green onions, sliced
- Hot cooked rice
- In a medium bowl, combine steak with 2 Tbsp soy sauce, 1 Tbsp rice vinegar, ¾ tsp sugar, 1 Tbsp water, and 2 tsp cornstarch. Set aside for 30 minutes.
- Meanwhile, in a small bowl, combine chicken broth, ketchup, remaining 1 Tbsp soy sauce, remaining 1 Tbsp rice vinegar, Sriracha sauce, sesame oil, and remaining 2 tsp sugar.
- In another small bowl, combine remaining 2-1/2 tsp cornstarch with remaining 2 Tbsp water. Stir until cornstarch is dissolved.
- In a large fry pan, heat 2 Tbsp oil over medium-high heat. Add steak and stir-fry until barely pink, about 2 minutes. Remove from pan and reserve.
- Add remaining Tbsp oil and saute onion and garlic until onion is soft, about 1 minute. Add bell pepper and saute for 30 seconds.
- Stir in tomatoes and ketchup mixture. Return beef and add cornstarch/water mixture.
- Cook, stirring constantly until the sauce boils and thickens.
- Serve over rice with and top with green onions.
