Friends, I have to apologize that it has been a VERY LONG TIME since I’ve posted a recipe. To be honest, a lot of crazy stuff has been going on in my life. I gave birth to a baby boy, my Brendan Sean, at the end of June. Isn’t he the cutest little guy you’ve ever seen?!I also got divorced and have recently moved into a new house. So you could say life has been pretty hectic the past few months. But one dish I have turned to time and time again during the craziness is this Cheesy Baked Chicken Alfredo. It’s super easy AND all of my kiddos love it—even my super picky 6-year old!
I love that it just requires a handful of ingredients, most of which I usually have on hand anyway. We’re talking penne pasta (or you can use whatever kind you have), Tyson grilled chicken strips that you just zap in the microwave, steamables broccoli that you also nuke in the microwave, shredded mozzarella, and—my favorite—Bertolli’s basil Alfredo, which is basically what you’d get if Alfredo sauce and pesto had an incredibly scrumptious baby.
And guess what? Leftovers are even delicious! So if you’re looking for an easy weeknight meal that’s perfect for fall and that you can whip up lickety split, you gotta try this Cheesy Baked Chicken Alfredo. It’s sure to be a rotation regular!
- 1 16-oz box penne pasta (or short noodles of your choice)
- 2 cups cubed, cooked chicken*
- 1 10.8-oz bag steamable frozen broccoli cuts
- 2 15-oz. jars Bertolli Creamy Basil Alfredo Sauce
- 2 tsp minced garlic
- 2 cups shredded mozzarella
- Preheat oven to 350 degrees.
- Cook pasta until al dente, according to package directions.
- Cook broccoli in microwave according to package directions.
- Combine pasta, chicken, broccoli, garlic, and basil Alfredo sauce in an ungreased 13x9-inch baking dish. Sprinkle with mozzarella.
- Bake at 350 for 25 minutes or until cheese is melted and heated thoroughly. Enjoy!
