What’s your favorite Thanksgiving food? I know, I know. Talking Thanksgiving already and it’s not even Halloween yet. But you know it’s just around the corner. So ya gotta think ahead.
My favorite is not the turkey. It’s not the stuffing, the cranberry sauce, or even the bazillion pies. Ooooh, Mom’s chocolate cream pie….Sorry, I got distracted. My favorite Thanksgiving food is the mashed taters. I know that’s not just a Thanksgiving food, but growing up we didn’t eat lots of mashed potatoes. It was mostly baked potatoes. But we did have the mashed for Thanksgiving. And given enough confidence, enough extra room in my pants, and a total lack of self control, I could eat the whole pan.
So imagine my excitement when I made these Caramelized Onion and Garlic Baked Mashed Potatoes. First of all, say the words caramelized onion and garlic and you have my attention. It may be negative attention depending how close you are. And I might also offer you a piece of gum after. But YUM! Caramelized, sweet onions with savory garlic all whipped into creamy mashed potatoes with—get this—shredded Gruyere cheese. What the what?! Yep, I saved the best for last, baby. They’re cheesy, too! You whip them up and bake them with the yummies. Heaven!
Make these for Thanksgiving or any other night and you’re gonna love ’em. Just make sure to wear your stretchy pants cuz you’ll go back for seconds. 🙂
- 4 lbs red potatoes, cut into 2-inch pieces
- Salt, to taste
- 1¼ cup warm buttermilk (just zap it in the microwave for 30 seconds or so)
- ½ cup warm milk (you can warm it with the buttermilk)
- ¼ cup butter
- ½ tsp pepper
- 1 tsp salt
- 1¼ cup grated Gruyere cheese
- 1 cup caramelized onions, chopped
- 4 tsp minced garlic (about 4 cloves)
- 2 Tbsp fresh parsley, chopped (and extra for garnish if desired)
- Put potatoes in a large stock pot and cover with water. Sprinkle desired amount of salt into water and bring to a boil over medium-high heat; boil 20 minutes or until tender. Drain.
- Return potatoes to pot and mash to desired consistency. (Note: you can put them in a large electric mixer to mash them instead. Just know that the standard mixer bowl will get pretty full). Stir in buttermilk, milk, butter, pepper, and salt until well blended and butter is melted.
- Stir in cheese, onions, garlic, and parsley. Spoon mixture into a 2½-quart greased baking dish and bake at 350 degrees for 35 minutes. Top with additional parsley, if desired.
