Beef Yakisoba with Sugar Snap Peas is a delicious, family-friendly weeknight dinner that’s ready in under 30. With tender beef, crunchy vegetables, and hearty soba buckwheat noodles, it’s bound to be a new family favorite!
Friends, I have been so crazy, super busy lately—and I’m sure you can relate. Getting kids to school, working, just dealing with life can be tough. Especially now that fall is here and we have to brush the dust off our Halloween decorations. I’ll be doing that once I remember where I strategically placed them in the black hole (aka my garage). So what am I getting at here? Busy, crazy days call for quick, hardly-have-to-think-about-them dinners. Like this Beef Yakisoba with Sugar Snap Peas.
What makes it so easy is it’s a stir-fry, which means it’s quick. AND it’s made with none other than JSL Foods Fortune Soba Buckwheat noodles. Here’s what I love about them: they’re pre-cooked and microwaveable AND GMO and cholesterol free. So not only are they ready lickety-split, but they’re better for you. Let me show you just how easy this Beef Yakisoba with Sugar Snap Peas is to make. First, chop up your veggies and beef. Put the veggies together in a bowl.
Mix your sauce ingredients together. I just use a mason jar and shake ’em up. Then, remove the noodles from their packages and microwave each noodle package for 1 minute. Set those aside.
Toss the beef with the ginger and garlic.
In your large skillet or wok, stir-fry the beef until it’s browned on all sides.
Remove the beef from the skillet and add a little more oil (if needed). Stir-fry the veggies until they’re crisp-tender.
Then, toss in your noodles and sauce.
Simply stir-fry everything until it’s heated through. Then, give yourself a quick pat on the back that you whipped up a family-friendly, super delicious meal in less than 30. And, of course, delight in the thought that you’ve gained a little “me” time. 🙂

- YAKISOBA SAUCE:
- ¼ cup lite (or low sodium) soy sauce
- 2 Tbsp Worcestershire
- 1 Tbsp ketchup
- 1 Tbsp oyster sauce
- 2 Tbsp brown sugar
- 1-1/2 tsp rice vinegar
- Dash of hot sauce
- STIR-FRY
- 2 7.44-oz pkgs JSL Foods Fortune Soba Buckwheat noodles
- 1 lb. sirloin (or pre-cut steak for stir-fry)
- ½ tsp ginger
- 2 tsp garlic, minced
- 1 Tbsp canola oil
- 2 cups sugar snap peas, halved
- ½ large bell pepper, julienned and halved
- ½ large yellow onion, chopped
- 1 bunch green onions, sliced
- In a bowl or mason jar, combine sauce ingredients. Set aside.
- Remove noodles from soba noodle package (but keep them in their individual packages). Microwave each package for 1 minute. Set aside.
- Toss beef with ginger and garlic.
- Heat a large skillet or wok to medium-high heat and add oil. Once hot, add beef. Stir-fry until browned on all sides. Remove to a bowl.
- Add snap peas, bell pepper, and onion to same pan or wok and add additional oil, if needed. Stir-fry veggies until crisp-tender.
- Add noodles and sauce and stir-fry until heated through, about 2 minutes.
- Divide into bowls and sprinkle each with green onions. Enjoy!
