Do you love pasta as much as I do? Could you eat it every day and not get sick of it? Then we should be BFFs. And we can go out to eat and stuff our faces with carbs. Cuz I just can’t get enough noodles. Add an Asian spin and I’m uber excited.
That’s why I love this Thai Peanut Noodles with Chicken recipe. It combines my love of pasta with my obsession with Asian-inspired foods. Tender chicken, crunchy, fresh veggies, and spaghetti noodles combine in a deliciously sweet-spicy peanut sauce. And it’s the perfect 30-minute weeknight meal that will become a fast favorite. Yeah, baby!
- ½ cup smooth peanut butter
- 2 Tbsp soy sauce
- 2 cloves (2 tsp) garlic, minced
- 1½ tsp Sriracha sauce
- 1 tsp powdered ginger
- 2 Tbsp canola oil, divided
- 1 lb. boneless, skinless chicken breasts, cut into bite-sized pieces
- 8 oz. spaghetti noodles
- 1 bunch broccoli, cut into bite-sized florets
- 1 red bell pepper, cut into strips
- 1 cup snow peas
- ½ red onion, chopped
- In a medium bowl, whisk together the peanut butter, soy sauce, garlic, Sriracha sauce, and ginger. Set aside.
- Cook noodles about 1 minute less than instructed in package directions, until not quite tender. Drain, reserving 1 cup of the cooking liquid.
- Meanwhile, in a large skillet over medium-high heat, heat 1 Tbsp oil. Add chicken and saute until brown on both sides and cooked through. Remove from pan.
- Add just enough water to cover bottom of pan and add broccoli. Cook until broccoli is crisp-tender and bright green in color and water has evaporated. Remove from pan.
- Heat additional 1 Tbsp oil to pan and add remaining vegetables. Saute until crisp-tender.
- Stir remaining cooking liquid into sauce. Combine chicken, broccoli, noodles, and remaining vegetables. Pour sauce over mixture and toss to combine.
