Have you ever been to Chicago? I was there for the first time for a conference yesterday and it was COLD! We’re so lucky here in Utah. It’s been very mild so far. Usually by now, we’ve had a few heavy snow storms and the yucky inversion has started to settle in.
I really liked the little bit of Chicago I was able to see and experience. I stayed at a cute boutique hotel just minutes walking distance from the Magnificent Mile. And even though I don’t like the cold and usually avoid the snow, I have to say I really enjoyed walking along the tree-lit, shop-lined street as it snowed. It was like the winter wonderland you see in movies, people bustling, shopping for Christmas presents with coffee cups and umbrellas in hand.
I got to try my first honest-to-goodness Chicago deep dish pizza at a cute little place called Pizzeria Uno and it was amazing! It was piping hot when it came out and I sorta burned the roof of my mouth because I couldn’t wait to try it. But it was a small price to pay. Because the pizza was better than I could have ever imagined. The crust was just crispy enough, blanketed with gooey, delicious cheese, fresh veggies, and yummy sausage and pepperoni. As you can see from my picture, it was quite messy. But that only meant it was extra good.
So that deep dish crap that the local fast food pizza joints try to pass off as the real deal? Not even close. Not remotely like the real thing and a sad and sorry substitute IMO.
Anyway, speaking of no substitutions, I gotta tell you about the best corn chowder recipe in the world. Because despite the mild weather here, my tummy has just been craving soups. It’s like once November hits, it’s time to break out the hearty soup recipes. This Spicy Chicken Corn Chowder is one you’ll want to keep on hand whenever the weather outside is frightful. It’s the perfect, delicious remedy for cold winter blues. I mean, think about it. Corn chowder, in and of itself, is pretty darn amazing. But you add savory chicken and some chopped jalapenos and it’s like BAM! You got yourself a hearty and yummy dinner with a kick. And the best part? It has BACON in it, too. Yep, your eyes did not deceive you. Those little tasty nuggets of salty, crispy perfection are the perfect addition to this baby. This soup is a quick and easy one-pot meal you can throw together in 30. You can even double it because the leftovers are just as good!
- 2 chicken breasts, cut into bite-sized pieces
- 2 Tbsp canola oil
- 5 slices bacon, chopped
- 1 onion, chopped
- 1 jalapeno chile, seeded and finely chopped
- ½ tsp cayenne pepper
- ½ tsp salt
- ¼ tsp pepper
- 2 cups chicken broth
- 2 cans corn, drained
- 2 15-oz. cans creamed corn
- ½ cup half and half
- Cilantro, for garnish
- Heat oil in large saucepan over medium-high heat. Add chicken and cook, tossing often, until cooked through. Remove chicken to a bowl and cover to keep warm.
- In same pot, cook bacon over medium-high heat until crisp, 5 to 7 minutes. Transfer to a paper towel-lined plate.
- In same pot, saute onion, jalapeno, cayenne, salt, and pepper in bacon fat over medium-high heat until onions are softened, 4 to 5 minutes.
- Add broth, corn, and creamed corn and bring to boil. Simmer over medium heat until slightly thickened, about 5 minutes.
- Stir in half and half, bacon, and chicken and heat until warmed through. Season with salt and pepper. Spoon into soup bowls and garnish with cilantro.
