Mexican Chicken Noodle Soup is a delicious twist on the comfort classic! Chock full of all the staples and some added Mexican must-haves, it’s a super quick soup your whole family will love!
Hi, friends! Here I sit, typing away at a local Starbucks and I’m looking outside at the mountains, still covered in snow. While I can appreciate their beauty, when it comes to the end of February in Utah, I am SO READY for spring. This winter has been a doozie. Everyone I know, including myself and my kiddos, has been sick. And it hasn’t been a typical 4-day or week-long illness either. I literally had a cold for THREE WEEKS.
Shortly after I recovered from whatever crazy shiz I had, my bestie got sick, too. I knew what I had to do. I made her some quick and easy chicken noodle soup, and she came over with her littles and we all enjoyed it. It was serendipitous, really, because that chicken noodle soup gave me a wonderfully delicious idea for a soup I could create for the JSL Foods Fortune® Noodle Blogger Recipe Challenge I entered.
And that is how my Mexican Chicken Noodle Soup was born. Chock full of chicken noodle soup staples like carrots, chicken, onion, and chicken broth, this twist on a comfort classic is sure to knock your socks off. Because it’s also packed with goodies like black beans, diced tomatoes, green chilies, and corn. AND it’s made with Fortune® Udon noodles instead of the regular egg noodles, which makes it extra amazing AND super easy to make. Why? Because Fortune® Udon noodles are PRE-COOKED. All you have to do is heat them up. Plus, they’re MSG- and cholesterol-free and contain flaxseed and 130 mg of Omega-3 per serving. How awesome is that?
This Mexican Chicken Noodle Soup is so delicious and simple that next time I or someone I know gets sick, I’m whipping this baby out. My kids even loved it!
Let me show you just how easy it is to make. First, gather all your ingredients. For this recipe, I used the Fortune® Chicken Flavor Udon noodles.
In a large stockpot, melt your butter over medium-high heat. Then add your carrots and onions and saute until they’re crisp-tender, about five minutes.
Then, add your garlic and taco seasoning and saute for two minutes. Add your chicken broth and bring it to a boil. Then add your chicken, black beans, diced tomatoes, green chilies, and corn. Now’s the time to stir in your Fortune® Udon noodles. I used two packages, which was perfect. Stir to separate the noodles.
Bring that mixture to a boil for 3 minutes. AND THAT’S ALL. No need to wait an eternity for your egg noodles to cook. You’re done!
Amp up the flavor even more by garnishing with some of your favorite Mexican favorites. I topped it with limes, cilantro, cheese, and sliced jalapenos.

- 2 Tbsp butter
- 1 cup carrots, sliced
- ½ yellow onion, chopped
- 2 tsp minced garlic (2 cloves)
- 1 package taco seasoning
- 8 cups chicken broth
- 2 cups cooked, cubed (or shredded) chicken
- 1 15.25-oz can black beans, drained
- 1 14.5-oz can diced tomatoes
- 1 4-oz can chopped green chilies
- 1 cup frozen or canned corn
- 2 packages Fortune® Chicken Flavor Udon Noodles
- optional toppings: sliced lime, cilantro, shredded cheese, sliced jalapenos
- In a large stockpot over medium-high heat, melt butter. Add carrots and onion. Saute, stirring frequently, until crisp-tender, about 5 minutes.
- Add garlic and taco seasoning and saute an additional 2 minutes.
- Add chicken broth and bring to a boil. Add black beans, diced tomatoes, green chilies, and corn.
- Add Fortune® Chicken Flavor Udon Noodles and stir to separate noodles. Boil for 3 minutes, then remove from heat.
- Divide into soup bowls and top with sliced lime, cilantro, shredded cheese, and sliced jalapenos. Enjoy!
