Ham Fried Rice is the best takeout fakeout! Chock full of ham and veggies, it’s super quick to make and the perfect family-friendly dish for busy weeknights.
With the holidays behind us, there’s one thing I’m sure we can all agree on. After Thanksgiving and Christmas dinners, we’re done spending hours in the kitchen preparing a meal. Kids are going back to school and at work it’s business as usual. Which means we want fast, delicious meals we can whip up in no time.
Enter this Ham Fried Rice. It’s so quick, so easy, and SOOOOO much better than takeout that for my family it’s a no-brainer. It’s also chock full of all kinds of goodies, including fresh veggies, scrambled eggs, and flavorful Clifty Farm Country Ham.
Clifty Farm has been around since 1954, so when it comes to making deliciously seasoned, smoked ham, this family-owned business knows a thing or two about what it takes. For the blogger contest, I received a package of Country Ham Biscuit Slices and Country Ham Seasoning Pieces. For this Ham Fried Rice, I used the biscuit slices and saved the seasoning pieces to use in a baked Denver omelet later. Which was also INCREDIBLE BTW.
So put down the phone and forget about takeout. Let me show you just how easy it is to whip up this incredible takeout fakeout.
First, gather all your ingredients, including the Clifty Farm Country Ham Biscuit Slices.
Add 1 Tbsp of butter to a large skillet. Scramble the eggs over medium-high heat until firm and pour them into a bowl or plate to set aside.
In the same skillet, add the 2 Tbsp additional butter and sauté the onions, carrots, and bell peppers until crisp-tender, about 3 minutes.
Add your Clifty Farms Country Ham Biscuit Slices, garlic, water chestnuts, peas, and corn, and sauté until everything is heated through.
Add the rice, then make a well in the middle of the mixture to add and fry the sesame oil.
Add the soy sauce and oyster sauce, then add the eggs and top with green onions.
Mix those in until heated through, and you’re ready to go!

- 3 Tbsp butter, divided
- 2 large eggs, beaten
- 2 carrots, peeled and diced
- ½ large red bell pepper, diced
- 1 small yellow onion, diced
- 1 package Clifty Farm Country Ham Biscuit Slices, cubed
- 2 cloves garlic, minced
- 8 oz. water chestnuts, chopped
- 1 cup frozen peas, thawed
- 1 cup frozen or canned corn
- 4 cups cooked white rice
- 1 Tbsp sesame oil
- ¼ cup soy sauce
- 2 Tbsp oyster sauce
- 5 green onions, sliced
- Melt 1 Tbsp butter in a large skillet over medium heat. Add eggs and scramble until set. Pour into a bowl and set aside.
- Melt additional 2 Tbsp butter in same skillet and add carrots, bell pepper, and onions; saute until crisp-tender, about 3 minutes.
- Add ham, garlic, water chestnuts, peas, and corn and saute until heated through. Add rice and make a well in the center of the mixture. Pour sesame oil into well, then mix contents of pan together.
- Add soy sauce and oyster sauce and stir to combine. Stir in green onions. Remove from heat and enjoy!
