Happy Taco Tuesday! I hope y’all are preparing to whip up some delicious tacos for dinner tonight. So good and muy rapido! Although, tacos are really good any day of the week, right?
I teach the 3-year olds at church, and last Sunday we all sat around in a circle and said our favorite thing about our moms. One kid said his mom made the best “tatos.” We all agreed that was pretty darn cool, and I asked when I could come over for dinner. 🙂
No doubt, tacos are one of the best things on the planet. But it helps to have a side dish that rounds out the meal and gives it an extra punch. Am I right? So when I had an itching for some tacos one night, I broke into my huge Costco bag of frozen corn to throw together a side. With El Pollo Loco corn as my inspiration, I got to work. And WOW. This Chipotle Chile Corn Saute was born. It was AMAZING and so super simple to make. It’s crunchy corn sauteed with fresh bell peppers and onions, all tossed in a spicy blend of chipotle chile pepper and chili powder. If you prefer to dial down your heat, you can forego the chipotle chile pepper. You can use frozen, can, or fresh corn for this (next time I’m going fresh fo sho). So next time you’re planning your Mexican-inspired meal, whip this Chipotle Chile Corn Saute!
- 1 Tbsp butter
- ½ medium onion, chopped
- ½ red bell pepper, chopped
- 2 garlic cloves, minced
- 4 cups frozen, canned, or fresh corn kernels
- ¼ tsp chipotle chile pepper
- ½ tsp chili powder
- In a medium skillet over medium-high heat, melt butter.
- Add bell peppers and onions; saute until crisp-tender, stirring frequently.
- Add remaining ingredients and toss to to combine. Saute until corn is crisp tender. Enjoy!
