Guys, I’m so excited I can hardly stand it. The holidays are just around the corner and IT. IS. ON. There’s a radio station here in Utah that started playing Christmas music a few weeks before Halloween. Now that’s a little much, but I do like to start making plans for the holidays once fall comes around. And holiday planning always involves delicious food. I like to browse sites like this Walmart one for inspiration and ideas.
Holidays for my family are always a huge deal. And because my mom, my sisters, and I all love to cook, there is never any shortage of food. Especially on Thanksgiving. My mom always says, “There’s enough food here for Cox’s army!” In fact, we usually have enough leftover that we each have enough turkey to eat turkey sandwiches for a week. And I like turkey sandwiches as much as the next person. But sometimes ya just need something…different. Like some good old home-cooked comfort food to warm you up and soothe the soul as you enjoy the holidays with friends and family.
And what says comfort food better than a pan of gooey, cheesy potatoes? These Cheesy Scalloped Potatoes with Turkey and Broccoli are the perfect post-Thanksgiving meal. They’re hearty, delicious, and creamy layers of potatoes, turkey, and broccoli, topped with melted ooey gooey Kraft Natural Shredded Sharp Cheddar cheese. The cheese, which I easily found at my neighborhood Walmart in the cheese aisle, is deliciously rich and smooth. As I was making the casserole, my daughters had some of the cheese to snack on.
The best part of this casserole is it’s a cinch to make, so it’s perfect for any occasion or gathering.
First, whisk together the half and half, chicken broth, flour, garlic, onion, salt, and pepper over medium-low until thickened.
Then, layer half of the potatoes in your greased casserole dish.
Add your turkey and sprinkle on 1 cup of the cheese, then the other half of the potatoes. Pop it in the oven and bake it for about 35 minutes. Then top it with the broccoli and remaining 1-1/2 cups cheese and bake it for 15 more minutes.
Ahhhh cheesy perfection. The best thing about this casserole is you can have it for breakfast, brunch, lunch, or dinner, and the leftovers are delicious. And it’s adult AND kid approved. It’s comfort food at its best, my friends. This is my new go-to recipe for Thanksgiving leftovers and family brunches. What is your favorite cheesy comfort food dish? - 1 cup half and half
- ½ cup chicken broth
- 2 Tbsp flour
- ¾ cup chopped onion
- 1 tsp minced garlic
- ½ tsp salt
- ¼ tsp pepper
- 2 lbs russet potatoes, peeled and thinly sliced
- 2 cups cooked turkey, cubed
- 1-1/2 cups frozen broccoli, rinsed and thawed
- 2-1/2 cups Kraft Natural Shredded Sharp Cheddar cheese
- Preheat oven to 350 degrees. Grease a 13x9-inch pan or casserole dish.
- In a medium saucepan over medium-low heat, whisk together the half and half, chicken broth, flour, onion, garlic, salt, and pepper, stirring constantly until slightly thickened (about 4 minutes). Remove from heat.
- Layer half of the potatoes in the pan, making sure to cover bottom.
- Sprinkle with turkey and 1 cup of the cheese. Then layer with remaining potatoes. Pour cream mixture over layers. Cover with foil and bake for 35 minutes,* or until potatoes are almost tender when pierced with fork.
- Remove foil, top potatoes with broccoli and remaining 1-1/2 cup of cheese, and bake, uncovered, for an additional 15 minutes.
