Well hello there! I feel like it’s been forever. My, how you’ve grown! 🙂 What has kept me away? We moved into a house! YAY!
I’m super excited to be living in a place of our own. But between the moving and the waiting days for our gas to be turned on (translate: NO COOKING :-O) and the fact that we just got internet hooked up today (HELLO, WORLD!), I just wasn’t able to post. Each day it tore at me because I had this yummy Slow Cooker Cheesy Tortellini recipe to share and I had to keep it pent up inside. I felt like I was going to implode. Because to have a perfect-for-the-upcoming-fall-season slow cooker dish like this and not share it with you was just…NOT RIGHT.
So today is a new day and I’m happy to finally share the love. Because I love this recipe and I know you will, too. What’s not to love? Deliciously hearty meat sauce with cheesy tortellini and tossed with gooey, melty cheese for the ultimate Italian slow cooker meal that will have you singing, “That’s amore!” Just brown the meat, sausage, onion, and peppers, throw them in the crock pot, and take a nap. Wake up to the wonderful aroma of homemade Italian goodness to warm your heart—and your soul. Bring on fall!
- 1 lb. ground beef
- 1 lb. ground Italian sausage
- 1 large onion, chopped
- 1 bell pepper, chopped
- 1 24-oz. jar marinara
- 1 8-oz. pkg sliced mushrooms
- 1 20-oz. pkg tortellini
- 1 Tbsp minced garlic
- ½ tsp salt
- ¼ tsp pepper
- ½ Tbsp Italian seasoning
- ¼ tsp cayenne pepper
- 1 cup shredded mozzarella
- In a large skillet, brown ground beef and sausage over medium-high heat. Drain.
- Add onion and bell pepper and saute for about 2 minutes, stirring frequently.
- Spray a 6-quart slow cooker with cooking spray. Place ground beef mixture into slow cooker. Add remaining ingredients (except for tortellini and cheese) and stir to combine.
- Cook on low for 7–8 hours. Stir in tortellini and sprinkle with cheese. Cook on low for 15 more minutes.
