Friends, I gotta say I’m pretty dang excited. And it’s for two reasons, really. First, we just found out today that we’ll be renting a beautiful house we’ve had our eyes on. It’s in the perfect neighborhood where there’s lots of trees and it’s quiet AND the family across the street owns a bounce house company and they sometimes have a big blow-up toy out front that the neighborhood kids can play on. Holy schnikeys. AND the house is on a cul-de-sac so we’ll have like zero traffic. AND the kitchen has a gas stove. Things just got real. And they just got freaking awesome. Oh, and the house is way closer to work which means no crazy, cursing-the-construction-and-everything-else-in-sight (in my head, of course) commute.
The other thing I’m excited about? It’s these Oatmeal Chocolate Chunk Cookies, of course. I have to admit I lied in the title. Because yes, they have chocolate chunks. But they also have chocolate chips, too. So it’s a totally double your pleasure kinda thing. These chewy, chunky, chocolatey dreamies are so delicious and addicting. In fact, I brought them to work and a co-worker said he felt like a kid when he ate them because he kept eating them and ate like 5 with no regard for his waistline. Ahhh yes, life’s purpose accomplished. Helping people throw their diets out the window—one delicious cookie at a time. Of course I’m kidding. I do think a healthy diet is important. But my co-worker is 21, skinny, and has no idea what it’s like to have your metabolism go from turbo speed to turtle speed. So I’m okay with bringing him over to the dark side. Mwaahahhhhahhhhhh!
Whip up a batch of these and I guarantee they’ll disappear quickly. And if you want to feel like a kid again, eat 5. Then go outside and play hopscotch and kick the can to burn some calories.
- 1 cup butter, softened
- 1 cup sugar
- 1 cup brown sugar
- 2 eggs
- 1 tsp vanilla extract
- 2 cups flour
- ½ tsp salt
- 1 tsp baking powder
- 1 tsp baking soda
- 2-1/2 cups old fashioned oats
- 1 11.5-oz package milk chocolate chips
- 1 8-oz. Hershey's milk chocolate bar, coarsely chopped
- Preheat oven to 365 degrees. Line 2 cookie sheets with parchment paper and set aside.
- In an electric mixer, cream together butter and sugars. Add eggs and vanilla and mix until fully incorporated and smooth.
- In a medium bowl, combine flour, salt, baking powder and baking soda.
- Slowly add flour mixture to butter mixture.
- Stir in oats, chocolate chips, and Hershey's chunks.
- Roll into balls with a cookie scoop and place 1 inch apart on cookie sheet.
- Bake 8 to 10 minutes, let stand on cookie sheet for 1 minute, then remove to a cooling rack.
