I gotta say I’m torn. I’m excited for fall…for Halloween, the colorful leaves, crisp mornings, and hot chocolate. But I’m also so sad that summer will be coming to an end in the next few weeks. I’m seriously having issues. Do I start making soups and baking pumpkin chocolate chip cookies or do I throw some baby back ribs like these on the grill and whip up some yummy strawberry lemonade? Choices, choices. Well, my friends, I have chosen to savor the last few weeks of summer we have left by firing up my grill. Because once the inevitable Utah blizzard hits, the thing will be buried under a pile of snow. And as much as I love my grill, I’m not trudging out there in my snow boots just so I can use it. I’m just not that hard core.
So, if you’re with me, let’s journey to a wonderful land of grilled-not-fried potatoes (and no, we’re not heading to Idaho) where we can enjoy the blue skies, hot sun, and cool drinks. These Cajun Grilled Red Potatoes are similar in taste to oven-baked fries except they’re a lot heartier and pack a little heat from the Cajun seasoning. Plus, you can grill them alongside your favorite main dish grill recipe and BAM! Dinner is served. Now turn on some Bob Marley, sit back, relax, soak up the sun, and enjoy a pina colada.
- 6 large red potatoes
- 2 Tbsp olive oil
- 1 tsp minced garlic
- ½ tsp kosher salt
- ½ tsp Cajun seasoning
- Parsley, chopped (optional)
- Preheat grill to medium-high.
- Wash potatoes and pat dry. Place potatoes in microwave (I just put mine on a paper towel) and cook for 4 minutes.
- Remove and allow to cool until cool enough to handle. Cut each potato in half or thirds to create uniform pieces.
- Place potatoes in a medium bowl and toss with olive oil, garlic, salt, and Cajun seasoning to coat evenly.
- Grill potatoes for 5 minutes. Turn potatoes over and cook for an additional 5 minutes, then another 5 minutes on each side until fork-tender.
- Remove from grill and sprinkle with fresh parsley. Eat them as is or serve them with ketchup or your favorite fry sauce!
