Say hello to my new favorite sandwich. Reader, BBQ Pulled Pork and Coleslaw Sandwich. BBQ Pulled Pork and Coleslaw Sandwich, reader. *Handshake* You might have to wipe yours now. Cuz this sandwich is all sorts of luscious, juicy, sweet BBQ pork with melty, spicy Pepper Jack cheese, and zesty, tangy coleslaw for a flavor explosion that will send you to the moon. And with so many yummy goodies, ya might need a fork and knife to eat it. Which, of course, makes is extra delicious.
Making these BBQ Pulled Pork and Coleslaw Sandwiches is a cinch. After all, you already have the pork ready because you’re using your leftovers from these Slow Cooker Boneless BBQ Pork Ribs. You just have to throw together the super easy coleslaw. Easy peasy. Then pile the pork on a yummy Kings Hawaiian bun, drizzle it with the BBQ sauce that you made with the pork, and top that amazingness with a slice of Pepper Jack cheese. Pop it in the oven to broil just until the cheese starts to melt and then pile on the zesty coleslaw. If that ain’t love on a bun, I don’t know what is.
- 2 cups leftover BBQ Pulled Pork and BBQ sauce from this recipe (or your favorite pulled pork, cooked and mixed with your favorite BBQ sauce)
- 4 slices Pepper Jack cheese
- 4 Kings Hawaiian buns
- COLESLAW:
- 1 14-oz bag coleslaw mix
- ½ medium red onion, chopped
- ½ cup cider vinegar
- ½ cup mayonnaise
- ½ cup sour cream
- 2 tsp Dijon mustard
- 4 tsp sugar
- 1 tsp celery seeds
- ½ tsp pepper
- 2 tsp kosher salt
- In a large bowl, mix together all coleslaw ingredients. Stir to thoroughly combine. Set aside.
- Heat leftover pork and BBQ sauce in microwave just until warm, about 1 minute.
- Set oven to broil. Place Kings Hawaiian bun bottoms on a cookie sheet. Pile pork evenly onto buns, drizzle with BBQ sauce, and top each with a slice of Pepper Jack.
- Broil sandwiches just until cheese begins to melt and "droop." Remove from oven.
- Top sandwiches with coleslaw and bun top.
The coleslaw is zesty and quite tangy, which I feel complements the sweetness of the BBQ pork perfectly. However, if you prefer a sweeter coleslaw, you can decrease the cider vinegar to ¼ cup.
