These delicious, ooey Gooey Marshmallow Brownies are a staple at our house. Betcha can’t eat just one!
Can you really ever go wrong with marshmallows? Well, if you are making old fashioned s’mores and your marshmallow catches on fire because you are too impatient and want your marshmallow to soften quickly so you stick it right smack in the fire, then yes. Yes, you can. Or so I’ve heard. Not speaking from personal experience or anything. Noooooo. Moving on.
Let me introduce you to these Gooey Marshmallow Brownies. As we all know, marshmallow + chocolate = YUUUHHHHHMMMY. But there are thousands of marshmallow brownie recipes out there. So really this is kind of like a blind date. Kind of awkward, don’t know how they’re going to be, etc. I can tell you right now these babies are IT. Take yourself out of the marshmallow brownie dating pool because these are your soulmates. Cakey, moist brownie bottoms with a layer of gooey, marshmallowy heaven and then topped with (what else?)…chocolate frosting.
What I like about these and what makes them stand out from other ones I’ve tried is that the bottom is a true cakey brownie bottom. None of this barely-there tiny bottom crap. These brownies GOT BACK, Baby. And then the marshmallow layer. It’s the perfect amount of marshmallow, where it doesn’t overpower the brownie and make you feel like you’re going to be sick from all the sweetness. And then, of course, the rich, smooth frosting on top for the perfect double dose of chocolate to send you into total and complete dessert nirvana. Wouldn’t it be great if all blind dates ended that well? 😉
- BROWNIES:
- 1 cup butter, melted
- ¼ cup cocoa
- 2 cups sugar
- 4 eggs
- 2 tsp vanilla extract
- 1 tsp salt
- 1-1/2 cups flour
- 2-1/2 cups miniature marshmallows
- FROSTING:
- ¼ cup butter, melted
- 2 Tbsp milk
- ⅓ cup cocoa
- 1-1/4 cup powdered sugar
- Preheat oven to 375 degrees.
- Grease a 13x9-inch pan.
- In a large bowl, mix together the butter, cocoa, sugar, eggs, vanilla, and salt until well combined. Add flour and stir just until combined.
- Spread in pan and bake for 20 to 25 minutes. Remove from oven and immediately top with marshmallows.
- Bake an additional 2 minutes until marshmallows are slightly puffed.
- Using a knife dipped in water, spread marshmallows evenly over brownies. (I keep a glass of water nearby and dip the knife in every so often so the marshmallows don't stick.)
- Cool completely.
- For frosting, combine frosting ingredients in a large bowl and mix with a hand mixer. Spread over cooled brownies.
