Stuffed peppers. Stuffed mushrooms. Stuffed shells. Cheese-stuffed meatballs. YESSSSS. Anytime you add the word “stuffed” to the name of a recipe, you know it’s gonna be extra good. Your mouth is like, “Ohhhhh it’s ON.”
That’s why when I think of this Stuffed Chicken Parmesan, my heart goes pitter patter. It takes the classic Chicken Parmigiana and stuffs it with rich cream cheese, savory spinach, and melty mozzarella and Parmesan cheeses. Poor regular ‘ol Chicken Parmigiana doesn’t stand a chance. Sorry, old friend. I think it’s time we parted ways. It’s not you, it’s me.
Serve it with a side of pasta and some garlic bread (I strongly recommend this Mini Garlic Monkey Bread from Damn Delicious) and I guarantee it’ll become a fast fav. If you ever see regular Chicken Parmigiana again, just smile and tell him you hope he’s doing well.
- 4 oz. (1/2 of 8-oz. pkg.) cream cheese*, softened
- 10 oz. frozen chopped spinach, thawed, well drained
- 1¼ cups mozzarella cheese, divided
- ½ cup grated Parmesan Cheese, divided
- 2 garlic cloves, minced (about 2 tsp)
- 2 tsp Italian seasoning, plus extra for sprinkling
- 6 small boneless skinless chicken breast halves (1-1/2 lb.), pounded to ¼-inch thickness
- 2 eggs
- 20 Ritz crackers, crushed (about 1 cup)
- 1½ cups spaghetti sauce, heated
- Heat oven to 375 degrees F.
- Mix cream cheese, spinach, 1 cup mozzarella, ¼ cup Parmesan, garlic, and Italian seasoning until well blended; spread onto chicken breasts. Starting at one short end of each breast, roll up chicken tightly. Secure with wooden toothpicks, if desired.
- Beat eggs in shallow dish. Mix remaining Parmesan and cracker crumbs in separate shallow dish. Dip chicken in egg, then roll in crumb mixture to evenly coat. Sprinkle with more Italian seasoning to taste.
- Place, seam-sides down, in 13x9-inch baking dish sprayed with cooking spray.
- Bake 30 minutes or until chicken is done (165 degrees F). Remove and discard toothpicks, if using. Serve chicken topped with spaghetti sauce and remaining mozzarella.
